It’s hard to call this a recipe, since you can pretty much just throw whatever sounds good into a blender and call it a meal, but it’s something I make when I’m on the road and in the mood for something savory. Feel free to add/omit whatever you like and make it your own!
Raw Tomato Basil Soup (makes 1 large serving)
-handful of fresh basil
-a few sundried tomatoes (soaked until soft & rinsed, if possible)
-1/2 red bell pepper
-spices/herbs of choice: italian seasoning, garlic powder, & onion powder are some of my favorites
-1/2 avocado, if creamier soup is desired (you can slice the other half on top of the finished product!)
Simply blend or pulse first five ingredients in nutri bullet or home blender until chunky mixture is formed. Add half avocado for a creamier texture, and blend again. Top with the other sliced avocado half if desired and enjoy!
