Raw Vegan Tomato Basil Soup

Hello everyone! I want to share a quick raw tomato soup recipe with you all, perfect for making at home or on the go in the nutri bullet.FullSizeRender copy 3

It’s hard to call this a recipe, since you can pretty much just throw whatever sounds good into a blender and call it a meal, but it’s something I make when I’m on the road and in the mood for something savory. Feel free to add/omit whatever you like and make it your own!

Raw Tomato Basil Soup (makes 1 large serving)

-1-2 tomatoes

-handful of fresh basil

-a few sundried tomatoes (soaked until soft & rinsed, if possible)

-1/2 red bell pepper

-spices/herbs of choice: italian seasoning, garlic powder, & onion powder are some of my favorites

-1/2 avocado, if creamier soup is desired (you can slice the other half on top of the finished product!)

Simply blend or pulse first five ingredients in nutri bullet or home blender until chunky mixture is formed. Add half avocado for a creamier texture, and blend again. Top with the other sliced avocado half if desired and enjoy!

  1. This looks so good! When I was a kid my mom used to put tomato soup in sippy cups for me and my brother. It was less mess for her to clean up, and she didn’t have to deal with getting toddlers to sit still long enough to feed us – we could just go play and take our cups with us. Might do the same thing for this, replacing a sippy cup with my Magic Bullet 🙂 Sounds like a great lunch on the go!
