Vegan Mashed Cauliflower

Cauliflower mashed potatoes has been a favorite of mine for years. It makes a great side at dinner time and is completely neutral in food combining terms
(although I wouldn’t mix with nuts/seeds/dried fruit since it’s cooked). I love serving with kelp or zucchini noodles, or anything for that matter!

Vegan Mashed Cauliflower (serves 1-2 depending on cauliflower size)

-1 head cauliflower

-a couple cloves of garlic or garlic powder to taste

-herbs/seasonings of choice: thyme, chives, Bragg’s sprinkle, nutritional yeast (for a cheesy flavor), salt & pepper, etc.

-optional: raw goat cheddar, if not vegan

*Small amount of warm water (from steaming cauliflower) or almond milk to process cauliflower, if needed.

Steam and drain cauliflower, saving a small amount of the water in case it’s needed to process cauliflower. Place cauliflower and remaining ingredients in food processor and pulse/process until desired texture is reached. You can top with additional herbs or seasonings and serve immediately. Enjoy!
