Raw Vegan Zucchini Alfredo Pasta

If you’re interested in trying a creamy, raw vegan pasta recipe, you’re in luck! How do you make raw pasta, you ask?1656417_10152219878137270_1365375396_n

With a spiralizer! Thanks to this handy gadget, raw noodles are made possible in a matter of seconds. I. Love. This. Thing. I’ve had mine for 6 years and it’s still going strong!

Just in case you missed the video, I prepared this recipe with Drew Canole at the Fitlife Ranch recently. My dog Oliver even makes a special appearance 🙂

Here is the recipe!

Raw Vegan Zucchini Alfredo Pasta (serves 4)
Adapted from Alissa Cohen

-2 zucchini

-2 summer squash

-1 cup raw (unsalted) cashews

-1 cup raw pine nuts

-1 cup raw macadamia nuts

-3 tbs fresh lemon juice

-2-3 tbs water (more if needed to facilitate blending)

-2 cloves garlic

optional: 1-2 tsp Bragg liquid aminos

**Top with nutritional yeast/vegan parmesan, cracked black pepper, and/or cherry tomatoes, diced red bell peppers, mushrooms, etc.

Spiralize zucchini and squash, set aside. Blend remaining ingredients in food processor until smooth (I use this food processor and absolutely love it), adjust flavors to taste, and mix into noodles. Top with ingredients of choice, and enjoy!
