Pineapple Strawberry Green Smoothie

It will taste even better when summer is actually here and all of the wonderful summer fruits are in season! Until then, this will hold me over (and hopefully you too).

For those of you that are new to green smoothies, don’t worry you won’t even taste the greens! Just fruity goodness. Not a bad way to get your veggies in if you ask me 🙂 I make some variation of a green smoothie just about every day, and it never gets boring. The flavor combinations are practically endless.. just keep it simple and put together what sounds good to you. Sometimes I omit the strawberries and just do pineapple, depends on my taste preferences that day. Here’s a rough recipe for a refreshing (wannabe) summer favorite of mine:

Pineapple Strawberry Green Smoothie (makes about 32 oz)

-12 oz water or almond milk

-2 handfuls spinach

-a few leaves kale, removed from stem

-1/2 fresh pineapple or 1-2 cups frozen pineapple

-1 cup strawberries, fresh or frozen

-splash vanilla extract or vanilla bean powder

-optional: top with bee pollen & cinnamon

Blend all ingredients in high speed blender and enjoy! Top with cinnamon and bee pollen if you like. Try to drink slowly rather than gulping it all down in a few minutes. There’s a decent amount of fiber in there, so savor every sip to avoid bloating or feeling overly full. Let me know if you try it, and remember you can make any modifications that you desire!
